1 package fast rising yeast
1 1/2 cups hot water ( approximately 120 F )
1 egg white
1 tablespoon water
1/4 cup poppy seeds or 1/4 cup sesame seeds

Instructions

1.In a large mixing bowl, combine 4 cups of flour, sugar, salt, and yeast.
2.Add 1 1/2 cups of hot water and stir until the ingredients form a ball.
3.Knead the dough on a floured surface for about 10 minutes until it's smooth and elastic.
4.Place the dough ball in a greased bowl and cover it with a towel. Let it rise for 10 minutes.
5.Preheat your oven to 425°F and bring a large pot of water to a boil.
6.Divide the dough into 12 pieces and shape them into balls. Poke a hole in the center of each ball and stretch it until the hole is about 1-2 inches wide.
7.Drop the bagels into the boiling water and cook for 1-2 minutes on each side, then remove them with a slotted spoon and place them on a greased baking sheet.
8.Beat the egg white and tablespoon of water together, and brush the mixture over the bagels.
9.Sprinkle them with the poppy or sesame seeds, and bake them for 20-25 minutes or until golden brown.
