Basbousa is a traditional Middle Eastern dessert that's often served during special occasions, such as weddings and Ramadan. Also known as harisa, this semolina cake is light and fluffy, with a delicate crumb and a mild sweetness. It's usually soaked in syrup or honey to add moisture and flavor, and garnished with nuts, coconut, or dried fruit for a textural contrast. Basbousa is a great dessert to make for large gatherings or potlucks, as it can be easily sliced into squares and served to a crowd.

Instructions

1.Preheat the oven to 350°F. Grease a 9x13-inch baking dish with butter.
2.In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the buttermilk and semolina, mixing until fully combined.
3.Stir in the vanilla, baking powder, and baking soda until well blended.
4.Transfer the mixture to the prepared baking dish, using a spatula to smooth out the top.
5.Bake for 35-40 minutes or until golden brown on top and a toothpick inserted in the center comes out clean.
6.Meanwhile, make the syrup by combining the sugar and water in a saucepan. Bring to a boil and cook until the sugar has fully dissolved. Remove from heat and stir in the lemon juice.
