Ingredients

2 tablespoons olive oil , divided
1 cup celery , chopped
1 cup onion , chopped
2 garlic cloves , minced
1 1/4 cups pearl barley
1 cup long grain brown rice , white works well too
6 cups boiling water
1 cup carrot , julienne
3 tablespoons chicken bouillon powder , I use liquid
1 tablespoon parsley flakes
1/4 teaspoon red pepper flakes

Instructions

1.Heat a large pot and add 1 tablespoon olive oil. Add the chopped celery, onion, and minced garlic and sauté until the vegetables are soft.
2.Add pearl barley and long grain brown rice to the pot and stir until the grains are coated with oil. Add 6 cups boiling water, julienne carrots, chicken bouillon powder, parsley flakes, and red pepper flakes, and stir well.
3.Cover the pot and simmer for 45-50 minutes until the barley and rice are cooked through and the water is fully absorbed.
4.Remove the pot from heat and let it sit for 5-10 minutes. Fluff with a fork and serve.
