Ingredients

2 teaspoons olive oil
1 cup chopped onion
4 fresh anaheim chilies , seeded , deveined and chopped
4 fresh jalapeno chiles , seeded , deveined and chopped
8 cups chicken broth , divided
1 cup pearl barley
1 can hominy , drained and rinsed
2 containers salsa verde ( or use the Mexican salsa verde recipe of your choice )
1/2 teaspoon ground cumin
shredded cheddar cheese , for garnish ( optional )
finely chopped green onion , for garnish ( optional )
Pozole is a traditional Mexican soup that typically features hominy and meat. This version of pozole replaces the meat with barley to create a hearty, vegetarian stew. The barley not only adds a nutty flavor and chewy texture, but it also makes this dish more filling and nutritious. Instructions

1.Heat the olive oil in a large pot over medium heat. Add the onion, anaheim chilies, and jalapeno chilies. Sauté until the onion is translucent and the chilies are soft.
2.Add 4 cups of chicken broth to the pot and bring to a boil. Add the pearl barley, reduce heat to low, and simmer for 45 minutes.
3.Add the hominy, salsa verde, cumin, and the remaining 4 cups of chicken broth. Simmer for an additional 15 minutes.
4.Serve hot, garnished with shredded cheddar cheese and chopped green onions, if desired.
