1 cup pearl barley
3 cups vegetable stock or 3 cups water
1 teaspoon kosher salt
1/2 teaspoon turmeric
1/2 cup parmigiano-reggiano cheese , grated
1/2 teaspoon fresh ground black pepper
1 tablespoon unsalted butter , chopped

Instructions

1.Heat oil in a large pot over medium heat. Add onions and garlic and sauté until soft.

7.Lastly, add the butter and a squeeze of lemon for added acidity. Let sit for 5 minutes before serving.
