6 jumbo egg yolks , at room temperature
1/4 cup sugar
1/2 cup dark rum , divided
1 1/2 cups brewed espresso , divided
16 -17 ounces mascarpone cheese
30 ladyfingers
bittersweet chocolate , shaved

Instructions

1.In a large heatproof mixer bowl, beat the egg yolks and sugar on high speed for 5 minutes until thick.
2.With the mixer on low speed, add 1/4 cup of rum, 1/4 cup of espresso, and the mascarpone cheese until just combined.
3.In a small shallow dish, combine the remaining espresso and rum.
4.Dip one side of each ladyfinger in the espresso/rum mixture, then arrange them in a single layer in the bottom of a 9x13 inch baking dish.
5.Spread half of the mascarpone mixture evenly on top of the ladyfingers.
6.Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture.
7.Cover tightly with plastic wrap and refrigerate for at least 6 hours or overnight.
8.Before serving, sprinkle the top with shaved chocolate and confectioners' sugar if desired.
