Instructions

.Preheat the oven to 425°F.
.Heat the olive oil in a large skillet over medium-low heat. Add the onions, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper and sauté for 15 to 20 minutes, stirring occasionally, until the onions are limp and there is almost no moisture remaining in the skillet.
.Add the wine and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat and set aside.
.Unfold the pastry sheets onto a lightly floured board and roll each sheet to a 12 by 12-inch square. Cut each into 4 squares and place them on parchment paper-lined sheet pans.
.Brush the center of each pastry with olive oil, leaving a 1-inch border around the edge.
.Distribute the onion mixture onto the center of each tart, leaving the border uncovered.
.Crumble the goat cheese over the onions, and place one slice of tomato in the center of each tart. Distribute the mushrooms around the tomato.
.Sprinkle 1/2 tablespoon of basil on each tart and 1/2 tablespoon of grated Parmesan cheese.
.Finally, scatter the shaved Parmesan around the edges of the tarts.
.Bake for 20 to 25 minutes, until the pastry is golden brown. Serve hot or warm.
