Ingredients

chicken , cut into 10 pieces
kosher salt & freshly ground black pepper
1 tablespoon minced fresh rosemary leaf
olive oil
1 large head garlic , separated into cloves and peeled
1 teaspoon saffron thread
1 teaspoon fennel seed
1 can tomato puree
1 1/2 - 2 cups good chicken stock , preferably homemade
1 cup dry white wine
3 tablespoons Pernod
1 lb baby yukon gold potato , sliced ( about 1/4 in thick but no too thin )
This Bouillabaisse is inspired by the traditional fish soup that originated in the French port city of Marseille. Ina Garten's take on the stew includes chicken instead of fish but keeps the core Mediterranean flavors intact. The dish is straightforward to make and perfect for a cozy and comforting meal, whether it's a rainy day or a wintry night. The recipe is suitable for a family dinner or a casual get-together, and can be customized to suit personal tastes.

Instructions

1.Preheat the oven to 425 degrees F.
2.Season the chicken with 1 tablespoon salt, 1 teaspoon pepper, and the minced rosemary.
3.Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the chicken in batches and sear for about 3 to 5 minutes per side until browned. Transfer to a plate and set aside.
4.Add 2 more tablespoons of olive oil to the Dutch oven and add garlic, saffron, and fennel seeds. Cook for 1 minute over medium heat. Add the tomato puree, chicken stock, wine, Pernod, 2 teaspoons salt, and 2 teaspoons pepper.
5.Bring it to a boil and then reduce the heat. Let it simmer for 5 minutes.
6.Add the seared chicken and sliced potatoes to the pot. Cover and bake in the preheated oven for 30 to 40 minutes, or until the chicken is cooked through and the potatoes are tender.
7.Serve hot with crusty bread and enjoy!
