Ingredients

2 ounces barberries
3 tablespoons melted butter
1/3 cup raisins
2 tablespoons sugar
1 teaspoon cinnamon
1 teaspoon cumin
1 3/4 cups basmati rice ( soak in salted water 2 hours )
2 -3 saffron threads , soaked for 15 minutes in 1 T boiling water

Barberry Rice is a traditional Persian dish that has become very popular in many Middle Eastern countries. It is usually served as a side dish with grilled meat, chicken or fish. Instructions

1.In a small bowl, wash barberries with cold water and soak it for 10 minutes, then drain.
2.In a large pan, heat melted butter and add raisins, sugar, cinnamon, and cumin. Cook all together for 5 minutes on moderate heat.
3.Add basmati rice and barberries to the mix and cook while stirring for 1 minute.
4.Add saffron and salt, then pour 2 1/4 cups of boiling water and stir.
5.Bring it to a simmer and cover the pan with the lid. Cook for 18 minutes on low heat, until the rice has absorbed all of the liquid.
6.Turn off heat and let it sit for 5 more minutes.
7.Remove the lid and fluff the rice with a fork.
