Ingredients

1 boned leg of lamb
1 bunch of fresh mint or 2 cups of fresh mint , chopped firmly packed
2 medium lemons , juice of
1 tablespoon garlic , finely minced
2 tablespoons ground coriander
1 teaspoon cayenne pepper
2 teaspoons paprika
2 teaspoons ground cumin
2 teaspoons fresh ground pepper
2 ounces olive oil
4 ounces orange juice
2 tablespoons of fresh mint , chopped for garnish
Barbecued Mechoui Lamb is an exotic dish that hails from North African cuisine. The lamb is marinated in a flavorful and aromatic paste of mint, lemon juice, garlic, coriander, cayenne pepper, paprika, cumin, black pepper, and olive oil. Traditionally, the dish has been cooked in a traditional clay oven called a tandoor, but with modernization, it is cooked on the grill or oven too. Instructions

1.Preheat your grill by turning it on and closing the lid, then allow it to heat for 10 minutes.
2.Pat the lamb dry with paper towels and place it in a large baking dish.
3.In a mixing bowl, combine the mint, lemon juice, garlic, coriander, cayenne pepper, paprika, cumin, black pepper and olive oil. Mix well.
4.Rub the mixture all over the lamb, making sure it's coated evenly.
5.Pour orange juice into the bottom of the baking dish with lamb, not on the lamb
6.Place the lamb on the preheated grill, close the lid and grill for 10 to 15 minutes per side depending on the thickness of the meat.
7.Keep flipping the lamb until cooked to your preference.
8.Add fresh mint on top of the lamb once it is cooked and serve immediately.
