Ingredients

2 dried lemon myrtle , leaves ( or 1/2 tsp lemon myrtle seasoning )
2 rosemary sprigs , leaves picked
3 garlic cloves
1 tablespoon macadamia nut oil
2 tablespoons chopped fresh thyme ( or Australian Bush Spices Red Meat Blend )
600 g kangaroo meat , loin fillets
2 cups Baby Spinach
2 cups rocket
1/2 red onion , thinly sliced
1 red capsicum , thinly sliced
75 g roasted macadamia halves
2 teaspoons honey mustard
2 tablespoons white wine vinegar
80 ml macadamia nut oil

Instructions

1.Preheat a barbecue grill or chargrill on medium-high heat.
2.Crush dried lemon myrtle leaves, rosemary leaves and garlic cloves in a mortar and pestle, then add macadamia nut oil and thyme (or Australian Bush Spices Red Meat Blend), and stir well to combine.
3.Brush seasoning on both sides of the kangaroo meat.
4.Cook the kangaroo meat for 2-3 minutes each side for rare or until cooked to your liking.
5.Set the meat aside to rest for 5 minutes.
6.Combine baby spinach, rocket, red onion, red capsicum and roasted macadamia halves in a large bowl.
7.Whisk honey mustard, white wine vinegar and macadamia nut oil in a small jug until well combined.
8.Add the dressing to the salad, and toss gently to combine well.
9.Divide the salad among serving plates, and slice the kangaroo meat and place on top of each serving.
10.Serve and enjoy!
