4 skinless , boneless chicken breast halves
1/2 cup barbeque sauce
1/3 cup chopped fresh parsley
1/4 teaspoon garlic , finely minced
8 flour tortillas
2 small plum tomatoes , seeded and chopped
2 cups shredded Cheddar cheese

Instructions

1.Preheat grill to high heat.
2.Brush chicken breasts with barbecue sauce and grill for 6-7 minutes on each side or until cooked through. Remove and let rest for 5 minutes before shredding.
3.In a small bowl, combine remaining barbecue sauce, parsley, and garlic. Set aside.
4.Take 4 tortillas and sprinkle each with 1/4 cup of shredded Cheddar cheese. Add shredded chicken and chopped tomatoes on top of the cheese and drizzle 1 tablespoon of the barbecue sauce mixture over each tortilla. Top with another 1/4 cup of shredded Cheddar cheese and cover with another tortilla.
5.Heat a skillet over medium-high heat. Cook each quesadilla for 2-3 minutes on each side or until golden brown and cheese is melted.
6.Repeat with remaining tortillas and filling.
7.Serve hot, garnished with additional chopped parsley if desired.
