3 1/2 lbs beef chuck roast , trimmed & cut into 1 . 5-inch chunks
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons vegetable oil
3 onions , chopped
12 ounces beer
1/2 cup cider vinegar
2 tablespoons cider vinegar
1/2 cup ketchup
3 tablespoons dark brown sugar
1 1/2 tablespoons Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon dry mustard
3/4 teaspoon dried marjoram
1 dried chipotle chile
3 eggs , beaten
2 cans creamed corn
1/8 teaspoon cayenne pepper
3 tablespoons butter , melted
1 1/2 cups buttermilk
2/3 cup saltine crumbs
1/2 cup cornmeal
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups sharp cheddar cheese , shredded

Instructions

1.Preheat the oven to 350 degrees F.

5.Remove the beef from the Dutch oven and set it aside.
6.Add the onions to the Dutch oven and cook until they are soft and golden.
7.Add beer, cider vinegar, ketchup, brown sugar, Worcestershire sauce, cumin, dry mustard, marjoram, and chipotle chile to the Dutch oven; bring this to boil.
8.Return the beef chunks to the Dutch oven and get them coated thoroughly with the sauce.
9.Cover the Dutch oven and bring it to the oven.
10.Bake until beef is tender, which takes approximately 2 to 2 1/2 hours.
11.In a large bowl, mixture beaten eggs, corn, cayenne pepper, melted butter, buttermilk, saltines, cornmeal, baking powder, baking soda, and cheese until well combined.
12.Pour the mixture into a 2-quart glass casserole dish and bake it in the oven until it's golden brown, which takes about 45 minutes.
