Ingredients

1/2 cup prepared barbecue sauce
1 tablespoon tomato paste
1 tablespoon cider vinegar
1 chipotle chile in adobo sauce ( see Note ) , minced
1 tablespoon canola oil
1 pound portobello mushroom caps , gills removed , diced
1 medium onion , finely diced
4 8- to 10-inch whole-wheat tortillas
3/4 cup shredded Monterey Jack cheese
2 teaspoons canola oil
Barbecue Portobello Quesadillas are a tasty alternative to traditional meat quesadillas. This is an excellent meal for vegetarians and health-conscious people. Instructions

1.In a bowl, stir together barbecue sauce, tomato paste, cider vinegar, and minced chipotle chile. Set it aside.
2.In a large skillet, heat the canola oil. Add portobello mushroom caps and onion. Cook until tender for 5 to 7 minutes.
3.Place a tortilla flat on a work surface. Spread 1/4 of the barbecue sauce mixture on one side of the tortilla. Spread 1/4 of the cooked vegetables and 1/4 of the shredded cheese on top of it. Fold the tortilla in half.
4.Heat a nonstick skillet over medium-high heat. Brush the skillet with 1/2 teaspoon of canola oil. Cook the quesadilla in the skillet until golden brown for 2 to 3 minutes per side. Repeat with the remaining ingredients to make 4 quesadillas in total.
5.Cut quesadillas into wedges.
6.Serve immediately with sour cream and garnish with cilantro.
