Ingredients

2 chicken breasts ( boneless & skinless , sliced in half to make 4 cutlets )
1/2 cup barbecue sauce ( I use Sweet Baby Ray 's Hickory Barbecue )
4 flour tortillas , whole wheat
1 cup sharp cheddar cheese , shredded
2 -3 tablespoons olive oil

Instructions

1.Preheat oven to 425 F.
2.Heat a large skillet (preferably cast iron) over high heat.
3.Add the olive oil and chicken cutlets to the skillet, reduce heat to medium and sear until cooked through.
4.Remove chicken from the skillet and pour in the barbecue sauce to the same skillet.
5.Reduce heat to low, add the chicken back to the skillet and toss with the sauce.
6.On a baking sheet, lay out 2 tortillas and divide chicken equally between them.
7.Sprinkle the shredded cheese over the chicken, and top with remaining tortillas, placing them on top of the cheese.
8.Bake in the preheated oven for 8-10 minutes, or until the quesadillas are heated through and cheese has melted.
9.Cut each quesadilla into four pieces. Serve hot, garnished with green onions if desired.
