Ingredients

3 1/4 cups bread flour ( if not available , add 1 tbs gluten per cup of all-purpose flour )
1 1/2 cups water
1 teaspoon baking powder
1 1/4 ounces active dry yeast
1 - 1 1/2 teaspoon salt
2 teaspoons sugar
cornmeal ( for bottom of pan )
poppy seeds or sesame seeds
1 teaspoon flour
1 teaspoon baking soda
2/3 cup water
Barbari is a popular type of Persian Bread, commonly made and eaten in Iran. Instructions

1.In a large bowl, mix bread flour, sugar, yeast, baking powder, and salt.
2.Add water to the bowl and knead for 10 minutes until you have a smooth dough then cover the dough with a cloth and let it rest for an hour.
3.After an hour, preheat the oven to 475°F and prepare the pan by sprinkling cornmeal over it.
4.Divide the dough into 2-4 pieces and shape them into the size of a baguette.
5.Place the dough pieces on the pan, then, mix flour, baking soda, and water together and brush over the dough.
6.Use a blade miter to cut the dough as desired and sprinkle sesame seeds or poppy seeds over the top of them.
7.Put the pan in the oven for 20-25 minutes until golden brown, then take it out of the oven and let the bread cool down on a wire rack.

Barbari bread is soft and fluffy but also has a bit of a chew, making it great to dip in soup or stew or as a base for sandwiches.
