Instructions

1.Preheat the oven to 350°F (180°C) and grease a 9x5 inch loaf pan.
2.In a mixing bowl, cream the butter and raw sugar until light and fluffy.
3.Mix in the self raising flour, plain flour, desiccated coconut, pumpkin pie spice, vanilla, rum, eggs and milk until well combined.
4.Pour the batter into the prepared pan and smooth the top.

6.Brush the glaze over the top of the loaf and bake for 50-60 minutes or until golden brown.
7.Let the loaf cool in the pan for 5 minutes, then remove it from the pan and let it cool completely on a wire rack.
