Instructions

.Cut the carrots and onion into julienne strips and place them in a large bowl.
.In a medium saucepan, whisk together the rice vinegar, white sugar, salt, and water. Bring to a boil over medium-high heat, stirring frequently until the sugar dissolves.
.Pour the hot vinegar mixture over the carrots and onion and toss until the vegetables are thoroughly coated. Cover and refrigerate for at least 1 hour or up to 1 day.
.Preheat a large skillet over medium-high heat.
.In a large bowl, combine the ground pork, egg, breadcrumbs, garlic, ginger, soy sauce, green onions, salt, and pepper. Mix until well combined.
.Form the mixture into 2-inch meatballs and place them in the skillet. Cook, turning occasionally, until browned on all sides and cooked through, about 5 minutes per side.
.To assemble the bowls, divide the cooked jasmine rice among four bowls. Top each bowl with a quarter of the pickled carrots and onions, sliced cucumber, sliced jalapenos, and cilantro. Drizzle with soy sauce and sriracha sauce to taste. Serve immediately.
