Instructions

1.In a large bowl, mix together the mashed potatoes, shredded potatoes, egg, 1/4 cup of buttermilk, and granulated garlic. Season with salt and pepper.
2.Add 1 cup of flour, mixing well until combined. If the mixture seems too dry, add more buttermilk by the tablespoon until it comes together.
3.Heat a large skillet over medium heat and add enough oil to coat the bottom of the pan. Scoop 1/4 cup portions of the potato mixture into the skillet and flatten with a spatula. Cook for 2-3 minutes on each side, or until golden brown and crispy.
4.In a separate pan, cook the sliced peppers until tender and set aside.
