Ingredients

3 green onions
1 cucumber
1 medium carrot
3 chicken breasts
1 pint chicken broth
1/2 cup creamy peanut butter
3 teaspoons chili sauce
2 teaspoons brown sugar
1 teaspoon light soy sauce
2 tablespoons sesame oil
1 tablespoon vegetable oil
1 tablespoon shaoxing wine
1 tablespoon ginger , finely chopped
1 teaspoon sichuan peppercorn , cracked ( use pepper mill or spice grinder )

Instructions

1.In a large pot, bring chicken broth to a boil, add chicken breasts, and cook until tender, around 15 minutes.
2.Remove from heat and let cool. Shred the chicken into thin pieces and set aside.
3.In a mixing bowl, add peanut butter, chili sauce, brown sugar, soy sauce, sesame oil, shaoxing wine, ginger, and peppercorn flakes, mix well.
4.Boil a pot of water and add 2-inch pieces of the white and green portions of green onions, and blanch for 30 seconds.
5.Using a slotted spoon, remove the green onions from water and rinse with cold water. Give them a rough chop and put them aside.
6.Peel the carrot and using a peeler, slice into thin ribbons. Cut the cucumber into thin strips.
7.In a pan, heat the vegetable oil over medium-high heat. Add the shredded chicken and sauté until it is lightly browned. Remove from the heat and place in a mixing bowl.
8.Pour the peanut sauce in the mixing bowl, mix well and add green onions.
9.Garnish with cucumber and carrot ribbons. Serve chilled or at room temperature.
