1 1/2 teaspoons salt
1 egg , slightly beaten ( or 1/4 cup evaporated milk )
4 firm bananas ( yellow or slightly green tipped )
1/2 cup corn flake crumbs ( finely crushed or use bread or cracker crumbs or corn meal , I mixed a combo of what was in the cupbo )
oil ( for frying )

Instructions

1.Peel the bananas and slice them diagonally into 1/8 inch rounds.
2.Mix the salt and egg in a small bowl.
3.Spread the corn flake crumbs on a plate.
4.Dip each banana slice in the egg mixture, letting the excess drip off.
5.Coat the slice with the corn flake crumbs and place on wire rack.
6.Heat oil in a deep fryer at 375°F. Fry banana slices in batches until golden brown.
7.Remove with a slotted spoon and drain on paper towels.
