Ingredients

1 egg

1/3 cup white sugar ( about50/50 mix ) or 1/3 cup brown sugar ( about50/50 mix )
1 cup of ripe mashed banana
1 cup whole wheat flour
1 tablespoon baking powder
1 cup wheat germ
1/2 teaspoon vanilla
1/2 cup raisins or 1/2 cup chocolate chips
1/4 cup chopped walnuts ( optional )

Instructions

1.Preheat the oven to 375 F (190 C) and place muffin cups on a muffin baking sheet.
2.In a medium bowl, whisk together the egg, oil, sugar, mashed banana, and vanilla.
3.In another medium bowl, mix together the whole wheat flour, baking powder, and wheat germ.
4.Add the dry ingredients into the wet ingredients, stirring until just combined.
5.Fold in the raisins or chocolate chips, and chopped walnuts.
6.Spoon the batter evenly into the muffin cups and bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
