Ingredients

1 7/8 cups all-purpose flour

1 large egg , lightly beaten
1 tablespoon lime juice
1 large banana , mashed ( should measure 1/2 cup )
3/4 cup nonfat yogurt ( use banana or vanilla yogurt if you do n't have plain )
2/3 cup golden raisin
2/3 cup powdered sugar , sifted
1 -3 teaspoon lime juice
1/2 teaspoon lime zest , finely grated
1 pinch salt

Instructions

1.Preheat the oven to 350F. Grease 9X13” baking dish.
2.In a mixing bowl, whisk together flour, salt, and baking powder.
3.In a separate mixing bowl, mix brown sugar and lime zest. Rub between your fingers until sugar is moist and fragrant.
4.Add egg and lime juice to the brown sugar mixture. Mix to combine well.
5.Add mashed banana and yogurt. Mix to combine.
6.Add dry ingredients to the bowl of wet ingredients. Stir until just combined. Fold in golden raisins.
7.Pour the batter into prepared baking dish and smooth the surface.
8.Bake for 35-40 minutes until a toothpick comes out clean and cake surface is golden brown.
9.While the cake is baking, make lime glaze by whisking powdered sugar, lime juice, zest, and pinch of salt until smooth.
10.Once the cake is done, set aside to cool for 10-15 minutes before drizzling the lime glaze on top.
11.Slice and serve the cake warm or room temperature.
