Ingredients

3 eggs
1 cup sugar
3/4 cup cream
1 1/2 cups wholemeal self-rising flour
5 bananas , very ripe
1 cup walnuts , coarsely chopped
1 cup dried coconut ( mix with the milk )
1/4 cup milk

Instructions

1.Preheat the oven to 350°F and grease a cake tin.
2.In a mixing bowl, whisk the eggs and sugar together until frothy.
3.Add cream, flour and milk to the mixture and stir until well combined.
4.Mash the bananas and add to the mixture. Stir until the bananas are well incorporated.
5.Add the chopped walnuts and dried coconut to the mixture and stir.
6.Pour the mixture into the greased cake tin and bake for 45-50 minutes.
7.Once done, allow the cake to cool and serve with tea or coffee.
