90 g butter
4 cups self raising flour

Instructions

1.Preheat your oven to 180C. Grease a 30cm x 10cm loaf pan and line with baking paper.
2.In a saucepan, place sugar, apricots, dates, water, bicarbonate of soda and butter. Bring it to a boil over medium heat. Reduce heat and simmer uncovered for 3 minutes. Remove from heat and let it cool.
3.Sift the flour into a large mixing bowl. Make a well in the center and add the egg and banana mixture. Stir until well combined.
4.Pour the cooled date mixture into the bowl and stir until well mixed.
5.Pour the mixture into your prepared loaf tin and bake for 1 hour and 15 minutes, or until a skewer inserted into the center comes out clean.
6.Take out and let it cool.
