Ingredients

3 1/2 lbs medium waxy potatoes , peeled and quartered lengthwise ( all purpose )
olive oil
7 ounces butter , cubed
1 bunch fresh rosemary , leaves picked and chopped ( I used 1 1/2 tsps dried )
1 whole bulb of garlic , quartered and smashed
5 medium red onions , peeled and quartered
1 1/2 cups cheap balsamic vinegar
sea salt & freshly ground black pepper

Instructions

1.Preheat your oven to 375 F.
2.Put the potatoes into a large roasting pan and toss with salt and black pepper, and enough olive oil to coat.
3.Place the cubed butter on top of the potatoes.
4.Sprinkle the rosemary over the potato mixture.
5.Halve the bulb of garlic crosswise and then quarter it lengthwise.
6.Scatter the pieces of garlic around the potatoes.
7.Put the onions in a bowl, and drizzle with the balsamic vinegar and some olive oil and season with salt and black pepper.
8.Toss the onions in the vinegar and oil mixture and then add them to the potatoes and garlic in the roasting pan, distributing them evenly throughout.
9.Roast for about 45 minutes, until the potatoes and onions are tender and the outside of the potatoes is crispy. Serve immediately.
