Ingredients

1 kg phyllo dough
1/2 kg almonds , finely chopped ( not powedered ! )
1/2 kg walnuts , finely chopped
3/4 cup sugar
1 cup breadcrumbs
1 cup brandy
1 tablespoon orange rind , finely chopped
1 teaspoon cinnamon
1 1/2 cups butter
4 1/2 cups water
2 cups sugar
1 cinnamon stick
Baklava rolls are a sweet and nutty pastry that has its roots in ancient Greece. This dessert is made by rolling layers of phyllo pastry filled with chopped nuts, butter, sugar, and cinnamon. Instructions

1.Preheat the oven to 180C/355F.
2.In a large mixing bowl, combine the finely chopped almonds, walnuts, sugar, breadcrumbs, brandy, orange rind, and cinnamon. Mix well.
3.Melt the butter in a saucepan over low heat and set aside.
4.Unroll the phyllo dough sheets and cover them with a damp kitchen towel to prevent them from drying out.
5.Take one sheet of phyllo dough and brush melted butter over it. Place another sheet of phyllo on top and brush it with butter as well. Cut the sheets into three sections of equal size.
6.Place a spoonful of the nut mixture at one end of each section of phyllo and roll it up into a cigar shape. Repeat until all the filling and phyllo sheets are used up.
7.Brush each roll with the remaining melted butter and place them on a baking tray.
8.Bake for 25-30 minutes or until the baklava rolls are golden brown.
9.Meanwhile, in a saucepan, combine the water, sugar, and cinnamon stick. Bring to a boil and then reduce the heat to low. Simmer for 10 minutes or until the syrup thickens.
10.When the baklava rolls are done, remove them from the oven and immediately pour the hot syrup over them. Allow them to cool down before serving.
