1 cup unbleached flour ( with high protein content , I use bread-making flour )
1 1/2 cups bottled water
4 3/4 cups unbleached bread flour
2 1/2 teaspoons table salt

Instructions

1.Mix 1/2 cup of proofed sourdough starter with 3/8 - 1/2 cup of bottled water.
2.Add 1 cup of unbleached flour with high protein content to the mixture and stir well.
3.Cover the bowl and let the mixture sit at room temperature for 8-12 hours.
4.Add 1 1/2 cups of bottled water to the mixture from step 3 and stir well.
5.Add 4 3/4 cups of unbleached bread flour and 2 1/2 teaspoons of table salt to the mixture.
6.Knead the dough by hand or with a stand mixer until it becomes smooth and elastic.
7.Shape the dough into a round ball and place it in a proofing basket lined with a tea towel.
8.Cover the basket and let the dough rise at room temperature for 3-4 hours.
9.Preheat the oven to 475°F (245°C).
