2 packages ziti
1 jar spaghetti sauce
1 container ricotta cheese
1 package baby spinach leaves
1 pound ready-peeled baby carrots
2 tablespoons olive oil
3 small zucchini , diced
1 package portobello mushroom caps , diced
1 package button mushrooms , diced
1 1/2 tablespoons minced garlic
1 can diced tomatoes , drained
2 tablespoons Italian seasoning
1 package shredded Italian cheese blend
3 jars spaghetti sauce

salt and ground black pepper to taste

Instructions

1.Preheat oven to 375°F.
2.Cook ziti according to package directions. Drain and set aside.

7.Top with shredded Italian cheese blend.
8.Bake in the preheated oven for 25 to 30 minutes or until cheese is melted and bubbly.
