Ingredients

8 cups chicken stock
2 cups polenta
2 ounces butter ( melted )
1/2 cup parmesan cheese ( grated )
2 tablespoons fresh parsley ( chopped )
24 slices salami ( thinly sliced )
1/4 cup sun-dried tomato ( well-drained & chopped )
1/4 cup black olives ( chopped )
3/4 cup mozzarella cheese ( grated & divided per Prep Step 6 )
3/4 cup parmesan cheese ( grated & divided per Prep Step 6 )
2 tablespoons fresh basil ( chopped & divided per Prep Step 6 )
Baked Stuffed Polenta (Polenta Al Forno) is a hearty Italian dish often served as a side dish or as a main course. This dish is a wholesome combination of creamy polenta, filled with a savory salami, sun-dried tomato, and black olive mixture, all topped off with ooey-gooey melted cheese. The polenta is cooked in chicken stock, which adds a depth of flavor to the dish while simultaneously imparting a comforting aroma. Instructions

1.In a large pot, bring the chicken stock to a boil.
2.Slowly add the polenta while whisking to avoid lumps.
3.Reduce the heat to low and cook for 30 minutes, stirring occasionally.
4.Remove the pot from the heat and stir in the melted butter, grated parmesan, and chopped parsley.
5.Preheat your oven to 375°F (190°C).
6.In a large bowl, combine the sliced salami, chopped sun-dried tomatoes, chopped black olives, 1/2 cup of grated mozzarella, 1/2 cup of grated parmesan, and half of the chopped basil.
7.Grease a 9x13 baking dish and pour half of the polenta mixture into the dish.
8.Spread the salami mixture over the polenta, leaving a 1/2 inch border around the edges.
9.Pour the remaining polenta over the salami mixture and spread it evenly.
10.Sprinkle the remaining 1/4 cup of mozzarella, 1/4 cup of grated parmesan, and the remaining chopped basil over the top of the polenta.
11.Bake the stuffed polenta for 30-35 minutes or until the cheese is melted and the top is golden brown.
12.Let the polenta cool for a few minutes before slicing and serving.
