Ingredients

1 lb farfalle pasta ( or other short pasta )
3 large aubergines ( or 5 medium )
salt
flour
1 cup olive oil
butter
10 ounces mozzarella cheese
2 tablespoons olive oil
1 medium onion
2 garlic cloves
2 cans Italian plum tomatoes
1 tablespoon sugar
salt and pepper
This delicious Mediterranean-style baked pasta with aubergines, tomatoes and mozzarella cheese is a comfort food that can easily feed the whole family. Instructions

1.Bring a pot of salted water to boil. Cook pasta according to package directions until al dente.
2.Slice the aubergines into thin rounds, sprinkle with salt and let them drain in a colander for 30 minutes.
3.Rinse the aubergines and pat them dry with a paper towel. Coat the slices with flour.
4.In a large skillet, heat the olive oil over medium-high heat. Add the aubergine slices and fry for 2-3 minutes on each side until golden brown. Remove the slices with a slotted spoon and set aside.
5.Add 2 tablespoons of olive oil to the skillet and sauté the onions and garlic until soft and translucent.
6.Add the tomatoes and sugar, and stir to combine. Season with salt and pepper and let it cook for 5-7 minutes.
7.Preheat the oven to 180°C (350°F).
8.Grease a baking dish with butter. Add the pasta, tomato sauce, and a layer of fried aubergine slices. Top with grated mozzarella cheese.
9.Bake for 20-25 minutes, until the cheese is melted and bubbly. Let it cool for a few minutes before serving.
