Ingredients

1/2 cup canned chopped tomato with juice
1/4 cup olive oil , plus more for coating baking dish
1 medium yellow onion , finely chopped ( about 1/2 cup )
2 garlic cloves , finely chopped
3 medium zucchini , rinsed and finely diced ( about 1 1/4 pounds )
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
1/2 cup dry breadcrumbs
1/2 cup freshly grated parmigiano-reggiano cheese
1 egg , lightly beaten
24 large white mushrooms , rinsed and patted dry ( about 1 pound )

Instructions

1.Preheat oven to 375 degrees Fahrenheit and place rack in center of oven.
2.In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until softened.
3.Add zucchini, basil, parsley, salt and black pepper. Cook until zucchini is tender and all the liquid has evaporated, about 8 minutes.
4.Stir in canned chopped tomato with juice and breadcrumbs. Cook for an additional 2 minutes.
5.Remove from heat and stir in Parmigiano-Reggiano cheese and lightly beaten egg.
6.Brush mushroom caps with olive oil and place on a baking sheet.
7.Fill each mushroom cap with the zucchini mixture.
8.Bake in the oven for 20-25 minutes until the mushrooms are lightly browned and tender. Serve hot and enjoy!
