Ingredients

2 cans diced tomatoes ( in juice )
2 tablespoons extra virgin olive oil
3 medium garlic cloves , minced or pressed through garlic press
1/4 - 1/2 teaspoon hot red pepper flakes
1/2 teaspoon table salt
2 tablespoons chopped fresh basil
3 cups ricotta cheese ( see note above )
4 ounces grated parmesan cheese ( about 2 cups )
8 ounces shredded mozzarella cheese ( about 2 cups )
2 large eggs , lightly beaten
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil
16 no-boil lasagna noodles ( see note above )
16 slices thinly sliced prosciutto

Instructions

1.Preheat oven to 375°F.

5.Spread a generous amount of the tomato sauce in the bottom of the baking dish, and place the cooked manicotti noodles in a single layer. Stuff each noodle with a slice of prosciutto, and then fill with the cheese mixture using a spoon or piping bag.
6.Pour the remaining tomato sauce over the top of the manicotti tubes, and sprinkle the remaining parmesan cheese over the top. Bake in the preheated oven for about 30 minutes, or until the cheese has melted and the top is golden brown and crispy. Let it cool for a few minutes, and serve hot.
