1 lb macaroni
1 1/2 lbs sweet Italian sausage , uncooked with casings removed
1 1/2 cups onions , caramelized
1 quart whole milk
6 tablespoons unsalted butter
6 tablespoons flour
3/4 lb gouda cheese , aged preferred ( about 4 cups grated )
salt and pepper

Instructions

1.Preheat an oven to 350°F.
2.Cook the macaroni until it is al dente then drain.

Once starting to thicken, add the salt and black pepper to taste, turn the heat down to low and stir through the grated gouda cheese, until it has completely melted.
5.Combine the macaroni, sausage and caramelized onions into the cheese sauce and transfer it all to a buttered baking dish.
6.Bake for about 15-20 minutes or until golden brown.
