600 g kumara ( sweet potato )
2 tablespoons olive oil or 2 tablespoons vegetable oil
3 teaspoons sweet smoked paprika
salt
fresh ground black pepper

Instructions

1.Preheat the oven to 200°C (400°F) fan bake.
2.Peel and dice the kumara into small cubes. In a large bowl, mix together the diced kumara, olive oil, sweet smoked paprika, salt, and black pepper.
3.Stir until the kumara is evenly coated in the mixture.
4.Line a baking tray with baking paper and spread the kumara out on the tray.
5.Bake for 25-30 minutes until golden and crispy.
