1 cup plain Greek yogurt ( such as Fage Total Classic )
1 tablespoon tahini ( sesame-seed paste )
1 tablespoon fresh lemon juice
3/4 cup water
1/4 cup bulgur , uncooked
3 cups chickpeas , cooked ( garbanzo beans )
1/2 cup fresh cilantro , finely chopped
1/2 cup green onion , chopped
1/3 - 1/2 cup water
2 tablespoons all-purpose flour
1 tablespoon ground cumin
1 teaspoon baking powder
3/4 teaspoon salt
1/4 - 1/2 teaspoon ground red pepper
3 garlic cloves
cooking spray
6 mediterranean style white flat bread ( such as Toufayan ) or ( 2 7/8 ounce ) pita bread
12 slices tomatoes ( about 1/4-inch thick )
1/2 cup lettuce , chopped ( optional )

Instructions

1.Preheat oven to 375°F(190°C).
2.In a small bowl, combine the Greek yogurt, tahini, and lemon juice. Mix well and set aside.
3.Add the bulgur to a food processor and pulse until finely ground. Remove it from the food processor and set it aside.
4.Add the chickpeas, cilantro, green onion, water, flour, cumin, baking powder, salt, red pepper, and garlic to the food processor. Pulse it all together until it becomes a thick paste.
5.Using a cookie scoop or spoon, form the chickpea mixture into small balls and place them on a greased baking sheet. Press them down to create small patties.
6.Bake for 15-20 minutes, or until the falafels are lightly browned on the outside.
7.Place 2-3 falafels on each flatbread or pita. Top with sliced tomatoes, choped lettuce (if using) and a spoonful of the yogurt-tahini sauce.
8.Fold over the flatbread or pita and serve hot.
