Ingredients

1 cup rice , uncooked
2 1/2 cups tomatoes , cooked ( canned is fine )
1/4 cup onion , minced
3/4 teaspoon salt
1 bay leaf
2 whole cloves
2 tablespoons butter , melted
2 tablespoons flour
1/4 cup cheese , grated
1/2 cup breadcrumbs , buttered
6 eggs
Baked Eggs on Spanish Rice is a hearty and delicious breakfast dish that's popular in many Latin American countries. Instructions

1.In a large pot, cook rice according to package directions.
2.Once the rice is cooked, add in the cooked tomatoes, minced onion, salt, bay leaf, and cloves. Mix well and cook for 5 more minutes.
3.Remove the bay leaf and cloves from the rice mixture.
4.Preheat your oven to 375 degrees F (190 degrees C).
5.In a small bowl, mix together melted butter and flour until smooth. Pour this mixture into the rice mixture and mix well.
6.Grease a large baking dish with cooking spray.
7.Pour the rice mixture into the prepared baking dish and smooth the top.
8.Bake in the preheated oven for 10 minutes.
9.Remove the baking dish from the oven, and make 6 small wells in the rice mixture.
10.Break an egg into each of the wells.
11.Sprinkle the grated cheese and buttered bread crumbs evenly over the top of the egg and rice mixture.
12.Return the baking dish to the oven and bake for an additional 12-15 minutes, or until the eggs are cooked to your liking.
