Ingredients

2 1/4 lbs chicken thighs or 2 1/4 lbs chicken breasts , on the bone
1 lb carrot , peeled and cut into batons
3 tablespoons olive oil
1/2 ounce butter
3 medium potatoes , peeled and cut into 1/4in slices
2 lemons
2 -4 garlic cloves , peeled and finely sliced
2 -3 sprigs fresh rosemary or 1 teaspoon dried herbs
sea salt and black pepper

Instructions

1.Heat the oven to 190C/fan 170C/gas 5.
2.Put the chicken thighs or breasts into a roasting tin.
3.Put the carrots and garlic around the chicken.
4.Drizzle the olive oil and butter over the vegetables and season well.
5.Cut one of the lemons into quarters and tuck them in and around the chicken.
6.Cook for 1 hour or until the chicken is golden and crisp.
7.While the chicken is cooking, parboil the potatoes for 8 minutes, add salt and drain.
8.Arrange the potatoes in a layer in a baking dish and pour over some olive oil. Season and bake for 45 minutes or until golden and crispy.
9.Scatter over the rosemary and serve with the chicken and vegetables. Enjoy!
