2 tablespoons oil

1 red pepper , deseeded and sliced

300 g long grain rice
1 liter chicken stock or 1 liter vegetable stock
227 g canned chopped tomatoes
100 g mature cheddar cheese , cubed

Instructions

1.Preheat the oven to 180°C (350°F/Gas 4).

5.Add the chicken or vegetable stock and canned chopped tomatoes, and stir together.
6.Bring to a simmer then cover and transfer to the oven.
7.Bake in the oven for 25 minutes or until the rice is cooked.
8.Remove from the oven, stir in the cubed cheddar cheese and serve hot.
