2 lbs carrots , cut into 1/4-inch slices and divided
6 slices swiss cheese , divided
4 tablespoons butter
1 cup onion , minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon chili powder
2 cups milk
1 cup fresh breadcrumb
5 slices bacon , cooked and crumbled
2 tablespoons butter , melted

Instructions

1.Preheat oven to 375°F.
2.Grease 9x13 inch baking dish and set aside.
3.Layer 1/2 of carrots and 3 slices of swiss cheese in the bottom of prepared baking dish.
4.Repeat with remaining carrots and cheese.
5.In a saucepan, melt butter over medium heat.
6.Add onion; cook until translucent, stirring occasionally.
7.Add flour, salt and chili powder; stir until well mixed.
8.Gradually whisk in milk.
9.Cook, stirring constantly, until mixture comes to a boil and thickens. Remove from heat.
10.Pour milk mixture over layered carrots and cheese.
11.In a small bowl, combine breadcrumbs and crumbled bacon; stir in melted butter. Sprinkle over top of carrot mixture.
12.Bake, uncovered, at 375°F for 35-40 minutes, or until top is golden brown and carrots are fork-tender.
