Ingredients

2 gallons cold water
1 cup kosher salt
3/4 cup sugar
1 tablespoon peppercorn
1 capon , about 6 to 8 pounds ( mine was 4 1/2 lbs )
3/4 lb potato , peeled and diced
white vinegar
2 tablespoons butter
1 bay leaf
juniper berries ( I omitted )
paprika ( I used about 2 1/2 T )
cinnamon ( I used 1/2 tsp & will a little less next time )
1/2 lb chestnuts , boiled and peeled ( I also broke mine apart coarsely )
1 golden delicious apple , chopped
3 tablespoons breadcrumbs ( I used gluten-free bread )
salt & freshly ground black pepper
extra virgin olive oil
2 lbs white pearl onions , peeled
1 cup dry red wine
Baked Capon with Pearl Onions is a classic dish that traces its roots back to the Medieval era. Capon is a chicken that has been castrated before maturity and reared for its wonderfully tender meat. The pearl onions give a sweet flavor that works well with the capon, making the dish rich and flavorful. Instructions

1.Brine the capon by dissolving the salt and sugar in water. Combine the peppercorn and pour the mixture over the capon.
2.Preheat oven to 375°F. Coarsely chop the potatoes and put them in a large pot and add vinegar, butter, bay leaf, juniper berries, cinnamon, and paprika. Simmer for 15 minutes and then let it cool down.
3.Add chopped apple, coarsely broken boiled, and peeled chestnuts, breadcrumbs, salt, and pepper.
4.Brush the olive oil over the capon and season with salt and pepper to taste. Fill the capon with the potato mixture and truss legs and wings with the kitchen twine.
5.Arrange peeled pearl onions on a baking sheet and coat with olive oil, salt, and pepper according to taste and place next to the capon. Add red wine to the visible juices in the roasting pan.
6.Roast the capon covered with foil for one hour. Remove the foil and roast it until golden-brown and cooked for about 30-45 minutes. Let it cool down before serving.
