Ingredients

250 g short-grain rice ( or risotto rice such as arborio )
1 liter milk ( or replace 250ml by cream )
100 g brown sugar
4 small ripe bananas
3 eggs ( separate )
50 g butter
1 teaspoon cinnamon
1 teaspoon lemon zest
1 dash salt
1/2 vanilla bean
3 tablespoons brown sugar , for coating
Austrian rice pudding, or Reisauflauf, is a traditional Austrian dessert that is made with milk, rice, and eggs. It is a comforting and sweet dish that is often served as a warm dessert on cold winter evenings. Instructions

1.Rinse the rice in a colander and place it in a pot on the stove with a pinch of salt and 500ml of milk, scraping the inside of the vanilla bean into the mixture, heating over low heat until it boils.
2.Keep stirring regularly and simmer until almost all of the milk has been absorbed(around 30mins).
3.Preheat the oven to 180 °C and grease the baking dish. In a separate bowl add the rest of the milk(or cream), butter, cinnamon, lemon zest, 50g brown sugar and the egg yolks, have all the ingredients combined and add the rice and beat carefully.
4.Cut the bananas (lengthwise) and place them in the bottom of the prepared baking dish. Cover them with the rice mixture.
5.In another bowl, whisk the egg whites with a pinch of salt until firm, then add 3 tbsp of brown sugar, stirring with an electric mixer, and the egg-whites will come up just before a peak. Spread this mixture like a cover on top of the rice mixture.
6.Bake for 35 minutes and enjoy your warm rice pudding.
