Instructions

1.Preheat the oven to 400°F.
2.Heat a large oven-safe Dutch oven over medium heat. Add olive oil to the pan. Once heated, add chopped onion and sauté for about 4 minutes.
3.Add arborio rice and sauté for an additional minute while constantly stirring.
4.Put spinach, broth, salt, and nutmeg in the pot.
5.Bring the mixture to a simmer, stirring occasionally. Cover and transfer the pot to the oven.
6.Bake at 400°F for 20 minutes. Remove the pot from the oven and stir in 1/4 cup of parmesan cheese, asparagus, and a little bit more broth if your risotto is too dry.
7.Return to the oven and bake for another 10 minutes.
8.Remove the pot and stir in the remaining 1/4 cup of parmesan cheese.
9.Let it cool for about 5 minutes before serving.
