Ingredients

4 apples ( Pink lady or lady Williams )
250 ml dessert wine
1 cinnamon stick
1/4 cup brown sugar
250 g cream cheese spread
1/2 cup milk
2 tablespoons caster sugar
1 vanilla bean , split
1 tablespoon custard powder , blended with
1 tablespoon milk , to form a paste
1 teaspoon arrowroot

Instructions

1.Preheat the oven to 180°C.
2.Cut off the top of the apples and remove the core with a melon baller.
3.Pour the dessert wine into a saucepan with the cinnamon stick and brown sugar, bring to a simmer and stir until the sugar dissolves.
4.Put the apples in an ovenproof dish and pour the wine mixture over them.
5.Bake for 15-20 minutes or until the apples are just cooked.
6.In the meantime, beat the cream cheese, milk, caster sugar, vanilla seeds and arrowroot mixture together in a bowl until smooth.
7.Pour the mixture into a saucepan and cook over low heat, stirring constantly until the custard thickens.
8.To serve, put the apples onto plates and pour the custard over.
9.Finish with extra cinnamon and brown sugar to taste.
