Ingredients

1 lb ground beef
1/4 cup chopped onion
2 -3 cloves fresh minced garlic ( optional )
2 cans ready-cut tomatoes
1 can diced green chilies
1 cup sliced fresh mushrooms
2 2/3 cups canned pinto beans , drained
1 tablespoon chili powder
1 teaspoon cumin
8 corn tortillas , cut into 1 inch strips
2 -3 cups cheddar cheese , shredded
1 cup sour cream
Baja Lasagna, also known as Mexican Lasagna, is a fusion of Italian and Mexican cuisine. This recipe combines the concept of lasagna layering with Mexican flavors and ingredients such as pinto beans, chili, fresh garlic, and cumin. Instructions

1.Preheat oven to 350 degrees F.
2.In a large skillet, cook the ground beef over medium heat until browned. Drain the excess fat.
3.Add chopped onion and minced garlic to the skillet. Cook until the onion is soft and translucent.
4.Mix in the two cans of ready-cut tomatoes, diced green chilies, sliced fresh mushrooms, canned pinto beans, chili powder, and cumin. Stir well.
5.Simmer for 10-15 minutes stirring occasionally.
6.In a 9x13 baking dish, layer corn tortilla strips on the bottom, then spoon in half of the beef mixture, then sprinkle with some shredded cheddar cheese and spoon a few dollops of sour cream over the top.
7.Repeat the layering of corn tortilla strips, beef mixture, cheese and sour cream again for a second layer.
8.Cover the dish with foil and bake for 25-30 minutes, until the cheese is melted and the lasagna is heated through.
