Ingredients

1 cup kale
1/2 cup spinach
1/3 cup cilantro
1 red bell pepper
1 anaheim chili
1 medium white onion
3 garlic cloves
2 cups riced cauliflower
2 chicken breasts

8 cups chicken stock
1/4 cup water
2 packets mccormick 's baja citrus marinade
Baja Citrus Soup is a delicious soup packed with Mexican flavors and healthy ingredients. This soup is perfect for a warm summer day when you want something light and refreshing, yet still filling, or for a winter day when you're craving some warmth and comfort. The soup's base is made up of riced cauliflower, creating a low-carb and high-fiber base. It's then filled with kale, spinach, red bell pepper, Anaheim chili, onion, and garlic to pack in as many nutrients as possible. Instructions

1.Preheat the oven to 375 degrees F.
2.Line a baking sheet with parchment paper.
3.Toss the chicken breasts with 1 tablespoon of olive oil and the Baja citrus marinade in a mixing bowl until fully coated.
4.Place marinated chicken on lined baking sheet and cook for 25-30 minutes, or until internal temperature reaches 165 degrees F.
5.While the chicken is cooking, heat the remaining olive oil in a large pot over medium-high heat.
6.Add diced onion, chopped garlic, diced red bell pepper, and seeded Anaheim chili pepper to the pot.
7.Cook for 5-7 minutes until ingredients soften.
8.Add riced cauliflower, kale, spinach, and cilantro to the pot and stir to combine.
9.Pour in chicken stock and water, and bring to a boil.
10.Reduce heat to low and let simmer for 10-12 minutes until the cauliflower is cooked and soft.
11.Remove chicken from the oven and let rest for 5-10 minutes before slicing into small pieces.
12.Add chicken and lime juice to the soup pot, stir to combine.
13.Serve hot and enjoy!
