4 cups kosher salt
2 gallons very cold water
2 cups packed brown sugar
1 cup granulated sugar
1/2 cup coriander seed , crushed
1/4 cup black peppercorns , crushed
6 bay leaves , crumbled
8 medium garlic cloves , split

1 tablespoon granulated garlic
1/2 cup freshly squeezed orange juice
1 1/2 bunches cilantro , stemmed and roughly chopped
The Baja California Grilled (or Roasted) Turkey is a recipe that comes from the Baja California region in Mexico. Instructions

1.Preheat your oven to 325°F.
2.Fill a large pot with the kosher salt and cold water and mix thoroughly to create a brine. Add in the brown sugar, granulated sugar, crushed coriander seed, black peppercorns, crumbles bay leaves, garlic cloves, and kosher salt, and stir until the sugar and salt are completely dissolved.
3.Remove the neck and giblets from the turkey and rinse it inside and out. Place the turkey into the brine, making sure it is completely submerged. Put the pot into the fridge and let it sit for at least 12 hours and up to 24 hours.
4.After 12-24 hours, remove the turkey from the brine and rinse it with cold water. Pat it dry thoroughly with paper towels.
5.In a food processor, puree the chipotle chilies, the olive or vegetable oil, Japanese soy sauce, and lime juice or rice vinegar. The marinade should be fairly smooth.
6.In a bowl, mix together the ground California chile, ground cumin, dried oregano, granulated garlic, and freshly squeezed orange juice. Stir to combine.
7.Rub the marinade all over the turkey, making sure to get it under the skin and into any crevices. Then, rub the spice mixture all over the turkey as well, massaging it into the skin.
8.Place the turkey into a large roasting pan and roast it in the oven for 2 1/2 to 3 hours, or until fully cooked. Let the turkey rest for 20 minutes before carving it.
