12 small size brinjals
1/2 teaspoon turmeric
1 teaspoon tamarind paste
2 tablespoons gram flour
1 tablespoon fennel powder
2 teaspoons chili powder
10 g salt

Instructions

1.Slit the brinjals lengthwise.
2.Soak the turmeric in 3 tbsp of water and set it aside.
3.Dry-roast gram flour until golden brown.
4.In a large pot, heat the oil over medium-high heat.
5.Add the brinjals and fry until they become a golden brown color. Remove the brinjals and set them aside.
6.In the same pot, add the fennel powder, chili powder, and salt, and mix well.
7.Add water to the pot along with the turmeric water and tamarind paste. Stir and allow it to come to a boil.
8.Add the fried brinjals to the pot, cover, and simmer for 10 to 15 minutes, or until the brinjals are tender.
9.Garnish the dish with coriander leaves and serve hot.
