Baingan Bharta (Eggplant Curry) is a traditional Indian recipe that originated in the Punjab region. Instructions

1.Preheat your oven to 400 degrees F (200 degrees C).
2.Take a large eggplant and prick holes in it with a fork. Place it on a baking sheet and roast in the oven for 30-40 minutes, until it is cooked through and soft.
3.In a pan, heat vegetable oil over medium heat. Add cumin seeds and let them crackle. Add thinly sliced onions and cook until they turn translucent.
4.Add ginger garlic paste and cook for 30 seconds.
5.Add diced tomatoes, curry powder, fresh jalapeno chile pepper and cook until the oil separates from the tomato pulp.
6.Take the roasted eggplant, let it cool. Peel off the skin and mash it.
7.Add mashed eggplant to the pan, and stir well to combine.
8.Add plain yogurt and salt, and cook for 5-7 minutes until well combined and thick in texture.
9.Garnish with chopped cilantro and serve hot with roti or rice.
