Ingredients

1 big eggplant
1 small onion ( finely cut )
1 big onion , fried to a brown onion paste
1 big tomatoes ( finely cut )
1 cup peas
1/2 teaspoon turmeric powder
1 teaspoon chili powder , to taste
2 green chilies
1/2 teaspoon garam masala powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1 tablespoon ginger-garlic paste
salt
ghee
3 -4 tablespoons cream
coriander leaves ( finely cut )

Instructions

1.Preheat oven to 220 C. Grease the eggplant with ghee, prick with a sharp knife, and place on a baking tray. Roast in the oven for about 30-40 minutes or until the flesh is soft and tender.
2.Once done, remove from oven and allow to cool. Peel the skin and mash it using a fork or potato masher.
3.Heat some ghee in a pan and saute the finely chopped onions until they turn golden brown.
4.Add ginger-garlic paste, turmeric powder, chili powder, coriander powder, cumin powder, and garam masala powder. Mix well and cook until the raw smell of the spices disappears.
5.Add the chopped tomatoes and cook until the tomatoes are softened.
6.Add green chilies, peas, and cook while stirring occasionally until the peas are tender.
7.Add the mashed eggplant and mix well. Add salt to taste.
8.Cook for 2-3 minutes, stirring occasionally.
9.Add cream, mix well, and remove from heat.
10.Garnish with some fried onions and coriander leaves. Serve with rice or rotis.
